Mint Chocolate Chip Doughnuts

Normally I pay little attention to St. Patrick’s Day. This year is different. This year I keep coming up with all sorts of green desserts!!

I made mint chocolate chip doughnuts, and of course the doughnuts are green! Then I added a chocolate glaze and shamrock sprinkles. You’re welcome!

The doughnuts are baked so they are more dense than fried doughnuts. Mint extract and mini chocolate chips are added to the batter, then each baked doughnut gets dunked into a rich chocolate glaze. Serve these with a glass of milk (tinted green maybe!) and I’d say that would be a wonderful dessert (or breakfast)!

Mint Chocolate Chip Doughnuts

One Year Ago: Mint Chocolate Chip Ice Cream

Mint Chocolate Chip Doughnuts
Makes 12 doughnuts

1 1/2 cups flour
1/2 cup cake flour
2/3 cup sugar
1 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
2 eggs
2 tablespoons butter, melted
3/4 cup milk
2 teaspoons mint extract
Green food coloring
1/3 cup mini chocolate chips

Chocolate Glaze:
1/2 cup (1 stick) butter
1/4 cup heavy cream
3/4 cup semi-sweet chocolate chips
2 cups powdered sugar
Sprinkles (optional)

Preheat oven to 325 degrees. Spray the doughnut pan with baking spray. Set aside.

In a medium-sized mixing bowl, whisk together the dry ingredients. Add in the wet ingredients and stir until well combined. Stir in the mini chocolate chips. Fill each doughnut cavity about 3/4 full. Note: for easier filling, put your doughnut batter in a pastry bag or a zip-lock bag and snip off a corner. Bake for 10- 12 minutes. Remove from the oven and let cool for 3 minutes. After 3 minutes, remove the doughnuts from the pan and place on a cooling rack for 10 minutes. Repeat with the remaining batter.

To make the glaze:
In a medium-sized saucepan, melt the butter over medium heat. Add in the heavy cream and chocolate chips and stir until the chocolate has melted. Remove the pan from the heat and slowly whisk in the powdered sugar. Dip the tops of the doughnuts into the prepared glaze and sprinkle with sprinkles (if using)! Note: If the glaze starts to set up too quickly, return the pan to low heat.  Place the doughnuts back onto the cooling rack to let the glaze set, or eat immediately! Enjoy!
